Mexican tarragon has a sweet, anise-like flavour that pairs well with chicken and seafood dishes. When added to acid like lemon or vinegar, they make a great salad dressing and marinade.

Its leaves are known to be rich in minerals such as iron, manganese and potassium. To reap the most of its health benefits, a handful of tarragon leaves can be steeped for 5 minutes in hot water to make a tea. It can be used as a mild sedative to relieve anxiety and stress, and also to relieve gas and indigestion.
