Whether you love or hate it, bittergourd is an amazing fruit vegetable that is packed with health-boosting compounds that maintain blood sugar and aids digestion. In India, bittergourd is known as Karela where it is often cooked as a dry curry, stir-fried with spices and onions. It also can be juiced and drunk on its own or with apples for some sweetness.

To alleviate the bitterness, cut the bittergourd lengthwise and remove the seeds and scrape off as much of the white pith with a spoon. Then, slice thinly and salt liberally, leaving it for 15-20 minutes. Squeeze the moisture out then rinse well again with water before cooking.
