Madeira vine is found in tropical Americas, East Asia and the Caribbean where its highly adaptable leaves are used in a variety of indigenous recipes. In Japan, it is known as “land seaweed” for its similar texture and can be eaten fresh or quickly blanched and chilled with some ponzu sauce. They also do well in a simple stir fry with sesame oil and ginger, or in soups.
